Veggie Stir-Fry






Makes 1 serving

1/2 tsp.  Olive oil                 
1/2 clove garlic
1/2 tsp. grated fresh ginger
1/2 cup green beans
1/2 cup fresh carrot
1/2 cup sliced fresh red bell pepper
1/4 tsp. sea salt
2 Tbsp.  organic vegetable broth

1. Heat oil in a medium skillet over medium heat; add garlic and ginger.
2.  Cook, stirring frequently, for 1-2 minutes or until fragrant.
3.  Add green beans, carrot, bell pepper, salt, and broth.
4.  Cook for 5 to 7 minutes, or until vegetables are tender-crisp.

This is the recipe I use for all my veggies.  I just make a bigger batch and use a more variety of vegetables.  Lots of different colors.  They are so good.  I love to have them served with the Chili Verde Sauce, or the Avocado Basil Cream sauce.  Supper yummy!  The whole family love it!
